Greek Platter
Ingredients
for the chicken (not pictured, recipe by Smitten Kitchen)
1 tablespoon olive oil
Zest and juice of 1 lemon
3 cloves garlic, minced
1 1/2 teaspoon kosher salt
3/4 teaspoon paprika
1/4 teaspoon hot smoked paprika, plus more to taste
1 1/2 teaspoons dried oregano, crumbled
Freshly ground black pepper
4 boneless, skinless chicken thighs (about 3 pounds)
Directions
Sometimes I make Tzatziki and Hummus (smitten kitchen has excellent recipes for both of these) but usually I just grab them at trader joes along with some pita. It’s also nice to have a jar of pickled red onions in the fridge for this. Cut up cucumber, tomatoes, romaine, crumble some feta, maybe some extra dill and put out some greek olives (again, TJs).
And serve.
